This soup is the central component of a very restricted diet
often given to heart patients as part of a controlled weight loss
program prior to surgery. That diet, in whole and as prescribed,
is nutritionally well-balanced and this soup may be eaten at any
time and in any amount as PART of that diet.
But, this soup, on its own, is NOT well balanced! It definitely
is NOT a stand-alone diet! I think it is irresponsible that this
wasn't explained/clarified in the preamble to this recipe. This
soup has been around for several years and IF it is combined with
that specific diet, and IF that diet is followed religiously,
one MAY lose more than a few pounds in a safe way and in a relatively
short time.
However, as a soup, in and of itself, it is really quite bland
and boring: visually unappealing and sorely lacking in flavour
and ingredient interest. I can't imagine making this soup if one
is not on that specific diet. Surprising to me, that from this
soup cookbook, the editors chose to showcase such an insipid and
pedestrian recipe without explaining that it is simply one part
of a weight loss diet. If low-cal, low-fat, low-carbs and low-cholestrol
are your aims, there are much better soup recipes than this one.
