Dinner Recipe: Angel Hair Pasta with Chicken
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients:
1/4 tsp Basil, dried
2 & 1/2 oz Broccoli
2 Tbsp Carrots
3 tsp Cheese, parmesan, shredded
2 Tbsp Chicken broth, uncondensed
2 oz Chicken, breast
1/2 ea Garlic, clove
1 & 1/2 oz Noodles, Angel Hair Pasta
1/2 Tbsp Oil, Olive, Extra Virgin
Makes 2-1/4 Cups (160 Calories each)
Preparation Instructions:
Heat 1/4 of the oil in a medium skillet over medium heat; add
diced chicken. Cook until chicken is cooked through, about 5 minutes.
Remove from skillet and drain on paper towel. Heat remaining oil
in same skillet. Begin heating water for pasta. Chop carrots,
add carrots to skillet; cook stirring, for about 4 minutes. Add
broccoli pieces and garlic to the skillet; cook , stirring for
2 minutes longer. Cook pasta according to package directions.
While pasta is cooking, add chicken broth, basil and Parmesan
to skillet. Stir to combine. Return chicken to skillet. Reduce
heat and simmer for 4 minutes. Drain pasta. Place in a large serving
bowl. Top with chicken and vegetable mixture. Serve immediately.
Snack Recipe: Apple Strawberry Smoothie
Prep Time: 5 minutes
Cook Time: none
Ingredients:
4 Tbsp Applesauce, Unsweetened
2 tsp Fructose
1 Tbsp Nuts, almonds
1/2 scoop Protein Powder
1 cup Strawberries
1/2 cup Water
Makes 1 & 3/4 Cups
Preparation Instructions:
Put frozen strawberries into a blender along with almonds. Add
chilled applesauce and rest of ingredients. Blend until smoothie
consistency being sure the almonds are ground. If you didn't freeze
the strawberries beforehand, simply substitute ice for the water.

Exotic Salad Recipe - 3 blocks
1/2 cup of egg beaters or 4 egg whites, beaten, 2 protein
3/4 cup Chinese peapods, chopped in large pieces, 1/2 carbohydrate
3/4 cup of Vidalia onion chopped in large pieces, 1/2 carbohydrate
1/4 teaspoon fresh ginger, chopped very fine
1 ounce light Swiss cheese, chopped small, 1 protein
1 teaspoon Parmesan cheese
1 teaspoon extra virgin olive oil, 3 fat
Salt and pepper to taste
1 orange, sliced into 8 pieces, 2 carbohydrate
Fry onions, snow peas and ginger until onions are translucent.
Lower heat and add eggs and cheeses. Stir quickly as egg beaters
or egg whites take very little time to cook. Remove from heat
and continue to stir until cheeses are melted. Add seasoning to
taste. Serve hot with orange slices laid on their sides around
1/3 of the plate as decoration and dessert.
