Breakfast Recipe: Savory Sausage Omelet

Prep Time: 15 minutes
Cook Time: 10 minutes

Ingredients:
2 oz Cheese, low fat, cheddar
1/2 cup Egg substitute
1 tsp Italian Seasoning
1 cup Melons, cantaloupe
4 Tbsp Onions, spring or scallions
1/2 oz Peppers, Bell, green
2 oz Sausage, Italian, turkey
1 cup Strawberries
1/4 cup Tomatoes

Preparation Instructions:
Saute sausage until cooked through in non stick pan with cooking spray. Add sliced onion and sliced peppers and cook 2 minutes more. Whisk egg substitute with italian seasoning, add to pan and cook until bottom firms. Add cheese and diced tomatoes, transfer pan to broiler to finish cooking and melt cheese. Fold over to make omelette. Chop strawberries, toss with a squeeze of lemon and Splenda..serve as dessert.

Lunch Recipe: Chicken Caesar Wrap

Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients:
2 Tbsp Cheese, parmesan, shredded
2 oz Chicken, breast
2 cup Lettuce, romaine
3/4 tsp Oil, Olive, Extra Virgin
2 Tbsp Salad Dressing, Caesar, Fat-Free
1 ea Tortillas, flour, 6 inch

Makes 1 Wrap (327 Calories Each)

Preparation Instructions:
Wash and pat chicken dry. Season with garlic powder, pepper, paprika, and salt (to taste) . Grill (I use a Foreman grill) or saute in non-stick pan coated with non-stick spray. Cut into strips or small chunks. Coarse chop the lettuce. Place in a bowl. Add oil, dressing and cheese, and toss. Add chicken to lettuce. Toss to mix. To assemble wrap: Place salad into tortilla and roll up. Secure with toothpicks. Cut to portion size. You can make this sandwich ahead, roll wrap in plastic wrap and refrigerate. Just before serving, unwrap, secure with toothpicks and cut. Enjoy with some iced herb tea!


Dinner Recipe: Angel Hair Pasta with Chicken

Prep Time: 10 minutes
Cook Time: 15 minutes

Ingredients:
1/4 tsp Basil, dried
2 & 1/2 oz Broccoli
2 Tbsp Carrots
3 tsp Cheese, parmesan, shredded
2 Tbsp Chicken broth, uncondensed
2 oz Chicken, breast
1/2 ea Garlic, clove
1 & 1/2 oz Noodles, Angel Hair Pasta
1/2 Tbsp Oil, Olive, Extra Virgin

Makes 2-1/4 Cups (160 Calories each)

Preparation Instructions:
Heat 1/4 of the oil in a medium skillet over medium heat; add diced chicken. Cook until chicken is cooked through, about 5 minutes. Remove from skillet and drain on paper towel. Heat remaining oil in same skillet. Begin heating water for pasta. Chop carrots, add carrots to skillet; cook stirring, for about 4 minutes. Add broccoli pieces and garlic to the skillet; cook , stirring for 2 minutes longer. Cook pasta according to package directions. While pasta is cooking, add chicken broth, basil and Parmesan to skillet. Stir to combine. Return chicken to skillet. Reduce heat and simmer for 4 minutes. Drain pasta. Place in a large serving bowl. Top with chicken and vegetable mixture. Serve immediately.

Snack Recipe: Apple Strawberry Smoothie

Prep Time: 5 minutes
Cook Time: none

Ingredients:
4 Tbsp Applesauce, Unsweetened
2 tsp Fructose
1 Tbsp Nuts, almonds
1/2 scoop Protein Powder
1 cup Strawberries
1/2 cup Water
Makes 1 & 3/4 Cups

Preparation Instructions:
Put frozen strawberries into a blender along with almonds. Add chilled applesauce and rest of ingredients. Blend until smoothie consistency being sure the almonds are ground. If you didn't freeze the strawberries beforehand, simply substitute ice for the water. Enjoy!

Exotic Salad Recipe - 3 blocks

1/2 cup of egg beaters or 4 egg whites, beaten, 2 protein
3/4 cup Chinese peapods, chopped in large pieces, 1/2 carbohydrate
3/4 cup of Vidalia onion chopped in large pieces, 1/2 carbohydrate
1/4 teaspoon fresh ginger, chopped very fine
1 ounce light Swiss cheese, chopped small, 1 protein
1 teaspoon Parmesan cheese
1 teaspoon extra virgin olive oil, 3 fat
Salt and pepper to taste
1 orange, sliced into 8 pieces, 2 carbohydrate

Fry onions, snow peas and ginger until onions are translucent. Lower heat and add eggs and cheeses. Stir quickly as egg beaters or egg whites take very little time to cook. Remove from heat and continue to stir until cheeses are melted. Add seasoning to taste. Serve hot with orange slices laid on their sides around 1/3 of the plate as decoration and dessert.
